Vegan Wrap with Hummus & Spinach

Makes 1 wrap

Ingredients

  • 1 wrap
  • 2 tbsp hummus
  • Handful of spinach
  • ½ avocado
  • ½ tsp spirulina

Preparation

  1. Prepare the wrap
    Place the wrap on a plate or chopping board. Optionally warm it for a few seconds in a dry frying pan or microwave so it rolls more easily.
  2. Spread the hummus
    Spread 2 tablespoons of hummus evenly over the wrap, leaving a small border to prevent mess when rolling.
  3. Add the spinach
    Spread a handful of fresh spinach over the hummus. Press it down lightly so it stays in place.
  4. Add the avocado
    Cut ½ avocado into slices or small cubes and distribute evenly over the spinach.
  5. Add the spirulina
    Sprinkle ½ teaspoon of spirulina evenly over the filling. It will naturally blend with the hummus and avocado.
  6. Roll the wrap
    Fold the sides in slightly and roll the wrap up firmly from bottom to top. Cut it diagonally in half before serving if you like.
  7. Serve
    Serve immediately, or wrap it in foil to take with you as a packed lunch.
