Preparation
- Preparation – Blue Yoghurt Ice Lollies
- Mix the yoghurt and sweetener
- Add the 250 g (plant-based) yoghurt to a bowl.
- Add 2–3 tsp honey or agave syrup and stir well.
- Add the blue spirulina
- Start with ½ tsp Blue Spirulina and mix until the colour is evenly blue.
- For a more intense colour, add a little more spirulina at a time, up to a maximum of 1 tsp.
(More than 1 tsp may make the flavour too strong.) - Add the fruit
- Mix a handful of finely chopped strawberries, mango, or berries into the blue yoghurt mixture.
- You can also place the fruit at the bottom of the moulds first for a nice visual effect.
- Pour the mixture into the moulds
- Divide the blue yoghurt mixture evenly between all the moulds.
- Tap the moulds gently on the counter to remove any air bubbles.
- Insert the sticks
- Place the sticks into the moulds. Make sure they stand firmly in the centre.
- Freeze the lollies
- Freeze for at least 4–6 hours, but preferably overnight so they are completely solid.
- Remove and serve
- Hold the moulds under warm water for a few seconds so the lollies release easily.
- Serve immediately and enjoy!
