Blue "Unicorn" Pancakes for Kids

Ingredients

  • 100 g flour or oat flour
  • 1 tsp baking powder
  • 1–2 tbsp (vanilla) sugar
  • Pinch of salt
  • 1 egg
  • 150 ml milk
  • 1–2 tsp blue spirulina
  • Butter or oil (for frying)
  • Optional: fruit, yoghurt/quark, honey/agave/syrup, sprinkles

Preparation

  1. Mix the flour or oat flour with the baking powder, sugar, and a pinch of salt in a bowl so the dry ingredients are evenly combined.
  2. In a separate bowl, whisk the egg and pour in the milk. Stir until smooth.
  3. Add the blue spirulina to the wet mixture. Stir well until the colour is completely even and no green specks are visible.
  4. Pour the blue mixture into the dry ingredients and mix into a thick, smooth batter. Do not over-mix, or the pancakes will be less fluffy.
  5. Heat a little butter or oil in a frying pan over medium heat. Spoon small rounds of batter into the pan and cook until bubbles appear on the surface and the edges look slightly dry.
  6. Flip the pancakes and cook the other side until firm and cooked through.
  7. Serve with fruit, yoghurt or quark, honey/agave/syrup, or fun sprinkles for a true unicorn look!
