Ingredients
- 100 g flour or oat flour
- 1 tsp baking powder
- 1–2 tbsp (vanilla) sugar
- Pinch of salt
- 1 egg
- 150 ml milk
- 1–2 tsp blue spirulina
- Butter or oil (for frying)
- Optional: fruit, yoghurt/quark, honey/agave/syrup, sprinkles
Preparation
- Mix the flour or oat flour with the baking powder, sugar, and a pinch of salt in a bowl so the dry ingredients are evenly combined.
- In a separate bowl, whisk the egg and pour in the milk. Stir until smooth.
- Add the blue spirulina to the wet mixture. Stir well until the colour is completely even and no green specks are visible.
- Pour the blue mixture into the dry ingredients and mix into a thick, smooth batter. Do not over-mix, or the pancakes will be less fluffy.
- Heat a little butter or oil in a frying pan over medium heat. Spoon small rounds of batter into the pan and cook until bubbles appear on the surface and the edges look slightly dry.
- Flip the pancakes and cook the other side until firm and cooked through.
- Serve with fruit, yoghurt or quark, honey/agave/syrup, or fun sprinkles for a true unicorn look!
